Tasty Tuesday | Kids Edition

Hello and welcome to another moment with Shona! Hey, it’s Tasty Tuesday today & boy do I have a yummy recipe for not only you mamas, but one in which your kids can help you make! It’s going to be awesome!
If you’re kids are like mine, you know how hard it is to get them to eat foods gat will make them strong & fuel their bodies. My kids cry when we introduce them to new foods.. mind you they are 9, 7 & 6 years old . Now our youngest will be two next week & she is so not a picky eater & we hope she stays that way!

Last week during Spring break, I decided to check out some cook books. I love testing out new things so I not only grabbed the cook books, but I also checked out books on gardening for beginners. I seriously want a garden so I will know exactly where my food is coming from. Anywho, I came across this delicious recipe and I just had to share! I will be sure to give credit at the end.
Today’s recipe is called carrot and orange treats! It takes 20 minutes to prepare, 25 minutes to bake & it serves 12! I thought this was a great way to get kids to eat their veggies & fruit! They will get an immune boost from the delicious carrots added, plus vitamin C & A from the oranges, which we all know is excellent medicine for our heart & lovely for our skin! With that being said, let’s prepare for our baking session!

 

Ingredients: 

1 1/4 cups all purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/2 cup light brown sugar

1/3 cup hazelnuts, chopped

1 tbsp poppy seeds

1 carrot, 3 1/2 (100g), grated

1/3 cup golden raisins

1/2 tsp ground cinnamon

1 1/4 cups rolled oats

Zest and juice of 1 large orange

3/4 cup buttermilk

1 large egg, beaten

5 tbsp butter, melted

Pinch of salt

Other: 

12 cup muffin pan

Paper liners

Time to Bake:

1. Preheat your oven to 400F (200 C). In a large bowl let your child combine the flour, baking powder, baking soda, and sugar. Stir in the nuts (optional), poppy seeds, carrots, golden raisins, cinnamon, pats and orange zest.

2. In another bowl, you will start working on your wet ingredients! So, mix the buttermilk, egg, butter, salt, and orange juice. Help your child mix with a spatula, then carefully pour the wet ingredients into your dry ingredients bowl.

3. Use a spatula to fold the mixture together gently. Remind your child that they need to be very careful doing this. After they have folded for a bit, switch off so you can fold the batter. Make sure you don’t fold too much, or the muffins won’t end up light and fluffy.

4. Line pans with 12 paper liners, then spoon the mixture into the liners-filling them two- thirds of the way full.

5. Bake for 20- 25 minutes.

6. Transfer to a wire rack to cool.
After it has completely cooled off, get some cute plates and sit down with your little one and enjoy the healthy snack or breakfast. If you have a daughter, make it into tea time. If you have a son, make it into a pirate mini party! Of course, these are optional lol! Let me know how everything turned out!
