{Late}Tasty Tuesday| A Tasty Acorn
Yes, I know it’s Wednesday & I don’t write on my blog on Wednesday’s, but I missed tasty Tuesday so I’m making up now. So on that note, welcome to a moment with Shona!
I am almost done with my new fitness program and this week I was introduced to acorn squash. Now, I have never even heard of an acorn squash, so I had no clue what it looked like or if I was going to like the taste of it.
I wish you could have seen me in the store looking around aimlessly searching for something that resembled an acorn! Lol! I even had my girls helping me. Once I got to spaghetti squash on my list, I just happened to see something that looked like an acorn & Lord behold, it was an acorn squash! Oh joy! Lol!
Once I got home, I posted a picture of the squash on social media because this momma needed help. I got some great recipes and I wanted to share one of them with you.
This is an acorn squash for those who don’t know:
Ingredients:
Acorn squash
Olive oil
Black pepper
Pink Himalayan Sea Salt
Those were the healthy ingredients lol! If you don’t want to go that route, use the following:
Unsalted butter
Black pepper
Pink Himalayan Sea Salt
Brown Sugar
Preparation:
1. Wash your acorn squash with a fruit and vegetable wash. I use Fit Organic fruit & vegetable wash.
2. Rub, rinse & dry your acorn.
3. Preheat your oven to 425 degrees.
4. Place on a cutting board & CAREFULLY cut in half. This process can be hard, so make sure your acorn doesn’t roll off your board.
5. Spoon out the seeds.
6. Place halves on a flat cooking try covered with foil.
7. Score the inside of the squash so it cooks throughout.
8. Spread olive oil (or butter) over inside {not too much}.
9. Sprinkle your Pink Himalayan Sea Salt, black pepper {and sprinkle brown sugar if you like}
10. Place in oven for 20 minutes or until completely soft.
11. Grab your fancy dish & dig in!
Now, on my meal plan, I had to eat two helpings of veggies & one serving of protein for dinner. So I added cabbage & chicken breast inside of my acorn squash! Y’all, it was BOMB!!
